将150g奶油与葡萄糖液混合后一边加热一边轻轻搅拌,让糖与奶油充分融合,煮开后关火,加入准备好的鱼胶块,均匀搅拌直至鱼胶块融化。

将糖、奶油与鱼胶的混合液倒入盛有巧克力的盆中,使用均质机进行搅拌

将奶油倒入打发器,开匀速进行打发。制作慕斯的奶油不需要过度打发,表面出现淡淡的纹路,提起后有小尖头即可。

待巧克力降温至50℃~55℃,把三分之一的打发奶油加入巧克力酱搅拌均匀后,把巧克力酱倒回奶油中,使用刮板从底部向上轻轻搅拌,直到慕斯液的质地越来越有光泽,有韧性,油脂和水分完美融合

将准备好的慕斯液倒入量杯或裱花袋中,挤入球形和蛋糕模具

将已经脱模的内陷,黄色一端向下,轻轻的放入慕斯液中,让其自然的下沉,或轻轻下压
