将蛋黄和细砂糖打至粘稠发白,将玉米油和牛奶加热至30-40度,倒入蛋黄中用搅拌器搅拌均匀。

将面粉筛过之后以少量多次的方式加入蛋黄糊中,采取Z字形方式搅拌可防止面粉上劲或结块,蛋糕口感也会更加松软。

打发蛋白,糖先少量再中量添加使打泡更加充分,打发至略带弹性的小尖角状态即可。

先用刮板取三分之一量的蛋白和蛋黄糊搅拌均匀,再将蛋黄糊倒入剩余的蛋白中搅拌均匀,再倒进蛋糕模具的三分之二,留空间给蛋糕膨胀

烤箱先设置170度预热,放进蛋糕胚子之后设置为150度,约50分钟即可。

将CORMAN 蔻曼雕塑家奶油冷藏状态和糖一起打发后做蛋糕抹面,此步骤白糖可换成MONIN 莫林糖浆,口感更丰富,奶油颜色也会随糖浆而变化。
将烤好的蛋糕胚横切为三部分,首先在第一层上面抹上奶油,采取边缘细致涂抹的方式,再将备好的水果一一填满,再加入少量奶油抹匀用以连接第二层蛋糕,一层一层按照第一层方法叠加,最后洒上糖粉完成。
