Adamance  was found in 2021 by Valrhona in the heart of the Rhone Valley which has rich fruit-growing. Each summer, the orchards yields its finest fruits goes into the market, so sweet complementary to chocolate for Chefs.

We went to meet Professionals Chefs, Pastry makers, Ice-cream makers, Bartenders etc., to dive deep into the world of fruit, we have discovered sectors that are rich in flavor and expertise, full of passionate women and men. Yet we have also seen practices which don’t respect people or nature, supply chains which aren’t always open and honest, and a race for quantity over quality, leaving flavor by the wayside.
